Ingredients for the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Cocktail (yields 850ml, to serve 10)
400ml decent vodka

150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Place the listed components into a pan, bring to a light boil, agitating to dissolve. Then, remove from the stove allowing it to reach room temperature completely. Decant into a clean bottle, cap it and refrigerate it in the fridge, it can be stored for around a month.
For the Batch Mix: Combine every spirits and syrup in a big jug, allow it to infuse for one hour, then filter it preferably using cheesecloth, so it's fully clarified.
When ready to serve: Add 85ml of your batch mix to a mixing glass filled with ice, and agitate gently for one minute to cool it down. Pour into a frosted cocktail glass or equivalent, decorate with the cranberries adding the final touch with a quick spritz of mandarin oil over the top.
